
Last nights dinner was Mary's crockpot pulled pork with a combination BBQ and Thai Sweet chili sauce topped with a bit of coleslaw on a nice soft bun. My contribution was a spin on this recipe. Since Poblanos are not available here in Thailand, I used 2 Red Peppers, 1 rehydrated dried Poblano (which we had brought from the US) and a few long red Thai peppers. We also substituted Japanese Pumpkin for the Butternut Squash (also more readily available) and used our homemade herb fettuccine pasta. A simple side salad finished the meal… All came out very good!
